It tastes like strong flavored lean beef. I imagine different restaurants serve different recipes.It's hard to describe a flavour to someone that has never tasted something. IMO it is closer to beef than something gamier, most likely because most bison is now farmed, so it does lose a lot of the "game" flavour that wild game has. It is much lower in fat than beef however, so you might be looking at a slightly drier burger. Pretty much all restaurants add spices, salt, and pepper to thier food before serving it to you - that goes for chicken, beef, turkey, veggies whatever. A "regular beef burger" from a restaurant has all kinds of stuff in it - it's not just beef. For example, when we make burgers at the place I work, we add breadcrumbs, eggs, worchestershire sauce, grainy dijon mustard, salt, pepper, and bacon fat. A bison burger could have one of a number of things in it depending on the restaurant. If they use a frozen pre-made patty, it will probably be just a basic seasoned burger, like a normal frozen beef burger. It the restaurant makes it from scratch, it could have anything in it to make it special.Buffalo burgers are awesome. I had one at Indian Summer or some shit here. I can't describe it, but if you like meat, you'll dig on the buffalo.
